Patented automatic machine for the dry cleaning of sgambati and speck after aging, before the shipping phase, to obtain a clean product with lower water consumption and reduced fat disposal costs.

An operator places the product on a conveyor belt and starts the cycle using a touch button. The product moves forward into the working tunnel with a step-by-step system, reaching different processing stations:

• The product is held in place by a clamp grip, while a horizontal-axis upper brush removes the lard from the entire surface.

• Then, in a separate unit, the product is rinsed and drained.

• Easy machine sanitization.

Available versions:

• 200/300 pieces per hour

• 400/600 pieces per hour

The machine can also degrease hams by installing a suitable format change kit.
