Semi-automatic working unit designed to perform the initial pre-deboning operations.

The machine allows adjusting, through a dedicated device, the amount of shank to be removed while simultaneously performing other interventions on the product (hip cut).

All machine components are made of stainless steel or food-grade plastic and are positioned in the upper part of the machine for easier sanitization.

A conveyor belt in front of the workstation ensures smoother and easier handling of the hams, with a top-to-bottom shank cutting system using a circular blade.
