Semi-automatic working unit designed to perform the initial pre-deboning operations.

Designed for hams with “redondo” bridge bone.

The machine allows adjusting, through a dedicated device, the amount of shank to be removed while simultaneously performing other operations on the product, such as removing the bridge bone.

Shank cutting is performed using a band blade.
